When three stars appear on Saturday night, Shabbat is over. The family gathers to say farewell to Shabbat in a ceremony called havdalah. A special plaited candle is lit, songs are sung and everyone smells a special box of spices. The spices smell sweet and the smell spreads all through the house. Jews hope that the peace and quiet of Shabbat will be remembered through the coming week, just like the smell of spices in the house. As the family smell the spices, they say: Blessed are You, O Lord our God, King of all the world, who creates various kinds of spices. After the blessing, the candle is put out by dipping it in a cup of wine.
